Vidalia Onion Pie

PADUCAH, KY - Banks Market Recipe of the Week - Serves 6

1 unbaked pie crust
2 cups shredded sharp cheddar cheese
4 Vidalia onions, chopped into 3/4 inch pieces
1 stick salted butter (1/2 cup)
4 eggs
1 cup sour cream
Ground black pepper

Preheat oven to 350 degrees. Line deep dish pie plate with unbaked pie crust. Sprinkle cheese over crust. Set aside. In a skillet, saute onions in butter until golden brown. Stir often (important to cook until caramelized-nice and brown and sweet). Pour cooked onions over cheese in pie crust. Set aside. In a mixer or blender, beat eggs and sour cream. Add a pinch of salt and pepper. Pour beaten egg mixture over onions. Gently mix all together. Bake on center rack in preheated 350 degree oven for about 40 minutes. Check after 35 minutes. When center is solid, it's ready. Take out of oven and let it set for about 30 minutes before slicing.

This is a really yummy recipe-ENJOY! After it cools, slice in serving size pieces. Slip single slices into small zip-lock bags and freeze. Great quick morning, or really anytime, treat.

You can also make this crustless. Make exact same way-just omit crust.
