Shrimp & Feta Tacos

PADUCAH - Banks Market Recipe of the Week - Makes 8 tacos

1 tablespoon olive oil
1 cup chopped green bell pepper
1/2 cup chopped sweet onion
1 pound peeled & deveined shrimp (31-40 count size)
1 tablespoon minced garlic
1/2 teaspoon lemon pepper
1/2 teaspoon cumin
Dash Tabasco sauce 
2 cups torn lettuce
8 warm corn tortillas or soft flour shells
8 ounces crumbled feta cheese
1 lemon or lime (cut into 8 slices)

In a heavy skillet, heat olive oil over medium-high heat and add peppers and onions. Cook and stir until crisp tender (3-4 minutes). Add shrimp, garlic, lemon pepper, cumin and Tabasco. Cook and stir just until shrimp turn pink (2-3 minutes). Remove from the heat. Spoon into tortilla shells and top with lettuce, feta and sauce with a slice of lemon or lime.

1 cup sour cream or plain Greek yogurt
1/3 cup minced fresh cilantro
1/8 cup lemon or lime juice
Pinch salt

In a small bowl, whisk together sour cream or yogurt, cilantro, lemon or lime juice and salt. Whisk together, cover and refrigerate.
