6 cups sweet potatoes,
peeled & cut into 3/4 to 1 inch chunks
8 ounce bag fresh cranberries
1 tablespoon extra-virgin olive oil
2 tablespoons maple syrup
2 teaspoons ground cinnamon
1 teaspoon salt
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. In a large bowl, mix the sweet potatoes, cranberries, drizzle of olive oil, maple syrup, cinnamon and salt all together until coated. Pour onto the parchment-lined pan in a single layer. Roast for 15 minutes, flip around and roast for another 15-20 minutes. Roast until fork tender. Remove from the oven and serve warm. WOW! What a combination of rich yummy flavors! Tasty alternative to the traditional sweet potato casseroles loaded with sugar and topped with marshmallows.
