Grilled Summer Squash

Serves 4

2 medium yellow summer squash
1/4 cup extra virgin olive oil
1 clove garlic, crushed
Salt
Ground black pepper
2 sprigs of fresh basil or rosemary

Preheat grill or grill pan to medium high heat. Barely cut ends off squash and then slice horizontally into 1/4 inch thick slices. Heat olive oil in a small skillet and add garlic clove. Smash the clove and cook over medium heat until the garlic bubbles in the oil and becomes fragrant. Take the flavored oil off the heat and brush slices of squash. Season with salt and pepper. Grill squash slices for 5 to 10 minutes on each side. Grill until desired tenderness. Brush with additional garlic oil and turn a couple of times to prevent sticking or burning. Remove to serving platter. Sprinkle with finely minced fresh basil or rosemary. Serve hot or at room temperature.
