Serves 4
2 cucumbers, peeled and sliced
20 small ripe tomato wedges
1 red onion, thinly sliced
1/2 cup whole seeded black olives
3/4 cup crumbled feta cheese
1/2 cup chopped fresh parsley
1/4 cup olive oil
3 tablespoons red wine vinegar
Salt
Ground black pepper
In a large bowl, place cucumbers, tomatoes, onions, olives, cheese and parsley. In a separate bowl, whisk together the oil, vinegar, salt and pepper.
Right before serving, pour vinegar and oil mixture over the prepared veggies and gently toss.
Such a fresh and crisp salad and no sugar. One of my favorites!
This time of year, when the Vidalia onions are in, I like to use them for a sweeter and totally different flavor.
