6 fresh peaches
3/4 cup chopped Vidalia onions
1 cup diced red bell peppers
1 Jalapeno pepper, seeded and minced
1/2 cup chopped fresh cilantro
1/4 teaspoon Chili powder
1/4 teaspoon salt
2 tablespoons fresh lime juice
Peel the peaches, remove seeds and dice. Put in bowl, including all the juice as you chop. Add remaining ingredients and stir. Taste and add a little more salt and chili powder if you like. Cover and refrigerate for at least an hour before serving. Great with tortilla chips or toasted pita chips.
