6 fresh peaches, peeled, pitted and diced
1/4 cup fresh lime juice
1/3 cup seeded and chopped jalapenos
1/2 cup diced Vidalia onion
1 tablespoon minced garlic
1 tablespoon chopped fresh cilantro
1/4 cup honey
Place prepared peaches in a large bowl. Squeeze lime juice over peaches. Toss and add jalapenos, onion, garlic, cilantro and honey. Gently toss all the ingredients and refrigerate until nice and chilled. Great with toasted pitas, chips or with your favorite bbq, baked or roasted chicken or pork.
