BLT & Avocado Lettuce Wraps

PADUCAH, KY - Banks Market Recipe of the Week - Serves 2

4 large leaves romaine or leaf lettuce
6 slices Applewood bacon
1 firm ripe tomato
1 firm ripe avocado
1/3 cup Hellmann's mayonnaise (or dressing recipe below)

Dressing Recipe
1 teaspoon Dijon mustard
¼ cup extra virgin olive oil
¼ cup red wine vinegar
½ teaspoon garlic powder
1 teaspoon chopped fresh parsley

Rinse and pat lettuce leaves dry. Cook bacon on jelly roll pan, in oven at 375 degrees until crispy. Take out and set bacon on paper towels to absorb extra grease. Slice tomato and then cut slices in half. Peel and seed avocado. Slice. Make dressing (or use good plain mayonnaise). Place 1 /1/2 slices of bacon in each lettuce leaf (or crumble bacon if you like). Add tomatoes and avocado slices. top with mayo or dressing. Roll up and enjoy.
