Story Headline: Grilled Summer Tomatoes & Onions

Serves 4

2 medium size ripe and firm tomatoes
1 Purple or Vidalia onion, outer skins removed
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon fresh minced garlic
Balsamic vinegar

Cut tomatoes and onions in 1/3 inch thick rings. Whisk together the oil, salt, pepper and garlic. Place the sliced vegies in the seasoned oil mixture. Prepare grill by heating coals to medium hot. Brush the clean grate with oil or spray with vegetable spray. Place the individual tomatoes and onions gently on the medium hot grate, leaving space between the vegies. Lower the lid for a couple of minutes to allow the flavor of the smoke to penetrate the vegies. Gently turn after about four minutes (may be sooner depending on the heat and how close the grate is to the coals). Leave on grill a few more minutes or until desired doneness is reached.

The flavor will be increased with the caramelizing flames and smoke. Drizzle with balsamic vinegar or more salt and pepper if desired. Serving just plain is also yummy.
