Story Headline: Fresh Corn, Tomato & Feta Salad

Serves 4

8 slices fresh ripe tomatoes
1 hand-full mixed dark lettuce greens
2 ears fresh sweet corn, cleaned & kernels scraped off cob
4 ounces feta cheese, crumbled
3 tablespoons red wine vinegar 
1/3 cup extra-virgin olive oil 
2 tablespoons chopped fresh oregano 
Ground black pepper 

Place sliced tomatoes in a single layer on a large plate. In a bowl, toss together the greens, corn and feta. Place mixture on top of tomatoes. Whisk together vinegar, oil, oregano, salt and pepper. Drizzle over corn mixture. ENJOY!
