8 ounce bag fresh rinsed cranberries
6 cups cleaned, cubed sweet potatoes
1 tablespoon pure maple syrup
1 tablespoon melted coconut oil
1 teaspoon ground cinnamon
1 teaspoon salt, separated
Combine fresh cranberries and sweet potatoes (cut into about on-inch cubes), maple syrup and melted coconut oil in a large bowl. Mix all together until berries and potatoes are evenly coated. Sprinkle cinnamon and 1/2 teaspoon salt over coated cranberries and potatoes. Stir until evenly coated. Line a baking pan with parchment. Pour mixture evenly onto prepared pan. Roast at 400 degrees for 45 minutes or until potatoes are tender. Take out of oven and sprinkle remaining 1/2 teaspoon salt over top of roasted berries and potatoes. Serve hot or at room temp. YUM!
For an added treat, add 1/2 cup pecan halves and/or a Granny Smith apple, peeled and cubed.
