4 heaping cups fresh baby spinach
1 large can mandarin oranges, drained (or 2 fresh oranges, sectioned)
3/4 cup lightly salted roasted peanuts
Thin slices of sweet or red onion rings (optional)
1/2 cup light Italian dressing
2 tablespoons soy sauce
On individual salad plates or shallow salad bowls, divide spinach evenly. Top equally with oranges and nuts. Whisk together the Italian dressing and soy sauce. Drizzle over tops of each salad right before serving.
I like to refrigerate my oranges the night before to make sure they are nice and cold before adding them to the salad.
For those who want to make a "meal" of this recipe, add pieces of roasted chicken or crispy bacon crumbles-oh so delish!
