Olives Baked in a Cheddar Pastry

PADUCAH, KY - Banks Market Recipe of the Week -
Makes 24 wrapped & baked olives

24 large pimento-stuffed green olives
  (or 24 large black pitted olives)  
1 1/2 cups shredded Cheddar cheese, softened   
3 tablespoons butter, softened   
3/4 cup all-purpose flour  
1/8 teaspoon cayenne pepper  

Preheat oven to 400 degrees. Roll olives around on a paper towel to dry off. In a small bowl, stir together the softened cheese and butter. Stir flour and cayenne pepper into the cheese and butter mixture. Blend well. Wrap a tablespoon of dough around each stuffed olive. (I refrigerate them at this point until time to bake.) Arrange the wrapped olives on a cookie sheet. Bake for 15 minutes, or until lightly golden brown.

Preheating the oven is important. Absolutely delicious recipe. You can also use large ripe, pitted olives. This is a great appetizer or side for a special meal.
