Layered Fresh Fruit Salad

PADUCAH - Banks Market Recipe of the Week - Makes 10-12 servings

1/3 cup fresh orange juice
1/8 cup fresh lemon juice
1/8 cup light brown sugar
1/4 teaspoon grated lemon zest
1/4 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
2 cups cubed fresh pineapple
2 cups thickly sliced strawberries
1 banana, thickly sliced
2 cups fresh rinsed & dried blueberries
1 cup heavy whipping cream
1/2 teaspoon pure vanilla extract
1 large whole strawberry, sliced & fanned
1 nice big sprig fresh mint

In a small saucepan, heat fresh orange and lemon juices, brown sugar, lemon and orange zest to a boil over medium-high heat. Reduce heat to medium-low. Simmer 5 minutes or until slightly thickened. Remove from the heat. Stir in vanilla extract and let sauce cool. In a large clear glass bowl, layer fruit and pour cooled sauce over fruit. Cover and refrigerate at least an hour before serving. Whip the cream adding 1/2 teaspoon vanilla extract. Place whipped cream, sliced strawberry and sprig of mint on top of layered fruit when ready to serve.
