2 cups thickly sliced mushrooms
1 cup cherry tomatoes
1 red bell pepper, cut into 1-inch squares
1 green bell pepper, cut into 1-inch squares
1 red onion, cut into chunks
1 zucchini, cut into thickly sliced rounds
1 yellow squash, cut into thickly sliced rounds
Marinade
Juice of 1 lemon
1/4 cup olive oil
3 cloves crushed garlic
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt
Freshly ground black pepper
12 skewers (stainless or bamboo). If using bamboo skewers, soak in water for at least 30 minutes. Prepare grill and when coals are white, medium hot temp, it's ready for cooking (or preheat oven to 400 degrees). In a small bowl, whisk together lemon juice, olive oil, garlic, oregano and basil. Season with salt and pepper, to taste. Thread mushrooms, tomatoes, bell peppers, onion, zucchini, squash onto skewers. Place skewers onto a baking sheet. Brush marinade mixture onto the skewers and let sit for 15-30 minutes. Grill over mediumhot coals for 5-6 minutes on each side or place in oven and roast until tender, about 10-12 minutes. Serve hot.
