Firecracker Lime Chicken

PADUCAH, KY - Banks Market Recipe of the Week - Serves 4

4 boneless, skinless chicken breast halves
1/4 teaspoon cayenne pepper
1/8 teaspoon paprika
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried parsley
3/4 teaspoon salt
1/4 teaspoon black pepper 
2 tablespoons butter
1 tablespoon olive oil
2 teaspoons garlic powder
3 tablespoons lime juice

In a zip lock bag, mix together cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme, parsley, salt and black pepper. Place chicken breasts in the bag with the spices and shake around, coating well. Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken in the medium-hot butter and oli for about 6 minutes on each side, until golden brown. Sprinkle with 2 teaspoons garlic powder and lime juice, cooking for 5 more minutes. Stir frequently to coat all sides with the sauce.

If you want to make spicier, add a little more cayenne. Garnish with lime wedges.
