Crispy Baked Zucchini Fries & Spicy Dip

Serves 4

2 large zucchini, cut lengthwise into 1/2 inch thick sticks
1 tablespoon all-purpose flour
Pinch salt
Pinch ground black pepper
1 egg
2 tablespoons milk
1/2 cup fine bread crumbs
1/3 cup grated Parmesan cheese
1/4 teaspoon garlic salt
1/4 teaspoon garlic powder
1/2 teaspoon Italian seasoning

Line a baking sheet with parchment paper. Place the zucchini sticks in a plastic bag with the flour, salt and pepper. Shake until all sides of the zucchini sticks are lightly coated in flour. In a bowl, whisk together the egg and milk. In another bowl, mix together the breadcrumbs, Parmesan and spices. Dip the zucchini in the egg/milk mixture and then dredge in the dry mixture so that all sides are well coated, then place on the baking sheet. Repeat with the remaining zucchini sticks. Bake in a preheated 350° oven for 20 minutes, turning after 10 minutes. Bake until golden and crispy. Serve with the following dipping sauce.

Dipping Sauce

1/2 cup plain yogurt
1 teaspoon minced garlic
1 tablespoon finely minced green onions (or chives)
2 teaspoons lemon juice
1/8 teaspoon ground cayenne
1/4 teaspoon salt
1/4 teaspoon pepper

Whisk all ingredients together and chill.
