Serves 20
2 packages Uncle Ben's long-grain and wild rice
3 whole bone-in chicken, boiled, pulled and shredded
1 cup Hellmann's mayonnaise
6-ounce jar marinated artichoke hearts, chopped
4 ounces pimentos, drained
2 cups chopped celery
1 cup Italian dressing
Cook rice according to instructions less 1/2 cu water. Mix all ingredients together. Refrigerate. Serve a scoop of salad on a lettuce leaf and garnish with ripe olives and slivered almonds. Great with a bran muffin.
