Coconut Roasted Sweet Potatoes

PADUCAH, KY - Banks Market Recipe of the Week - Serves 4-6

2 tablespoons coconut oil
2 pounds sweet potatoes, peeled and cut into 1/2-3/4 inch chunks
                 (or cut lengthwise in 1/2 inch thick sticks)
3 teaspoons light brown sugar, packed
1 teaspoon sea salt
1/4 teaspoon ground black pepper
1/8 teaspoon grated nutmeg
1/8 teaspoon ground cinnamon 

Heat oven to 350 degrees. Melt the coconut oil in a saucepan over low heat. In a large bowl, toss together potatoes, warm coconut oil, brown sugar, salt, pepper, nutmeg and cinnamon. Spread potatoes in an even layer on a large baking sheet. Roast, tossing occasionally, until soft and caramelized. Will take from 45 minutes to an hour.

If you're a fan of coconut, sprinkle a little shredded coconut over potatoes last 5 minutes of roasting.....yummy!
