Serves 4

4 Granny Smith apples
1/3 cup brown sugar
1/3 cup apple juice or orange juice 
                    (or dark or light rum)
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
Tiny pinch ground cloves
1/4 cup chopped pecans (optional)
1/4 cup chopped raisins or dried cranberries (optional)
4 cinnamon sticks
1 tablespoon butter, cut in 4 equal pieces
3/4 cup apple cider or apple juice or even orange juice

Remove stem and core center of each apple down to about 3/4 inch from the bottom. Spoon out the seeds. If you go all the way down, the filling will ooze out. In a saucepan, combine the sugar, juice (or rum), salt, nutmeg, cinnamon and cloves. Bring to a low bubbling simmer and stir until the sugar melts - a couple of minutes. If you choose to add the nuts and/or berries, add them now, only cooking the last minute or so. Place the prepared apples in an 8" X 8" baking dish and pour the cooked mixture into each apple. Place a cinnamon stick in each one and set a piece of butter on top of each. Pour the juice or cider in the bottom around the apples. Bake uncovered for about 25-30 minutes in a preheated 375 degree oven. Serve warm or at room temp.

If you'd like to serve this as a dessert, add a scoop of ice cream along side or serve just as they are. I like to take the cinnamon stick, stir one last time before eating and set the stick along side the apple.

You can use other apples, like Rome, Red Delicious or most any baking apple.
