Chicken & Fruit Lettuce Wraps

PADUCAH, KY - Banks Market Recipe of the Week - Makes about 10 wraps

1 roasted chicken, skin and bones removed
1/2 cup diced celery
1/2 cup diced Vidalia onion 
1/2 cup grapes, halved
1/2 cup diced apple
1/2 cup dried cranberries
1/3 cup slivered almonds (or walnuts, pecans) 
1/2 cup plain Greek yogurt
1/4 cup mayonnaise 
2 teaspoons lemon juice
Ground black pepper 
1 head Romaine lettuce

Chop the cooked chicken. In a large bowl, toss together the chopped chicken, celery, onion, grapes, apple, cranberries and almonds. In a small bowl, whisk together the yogurt, mayonnaise and lemon juice. Add sauce to the large bowl with the chicken mixture and toss to evenly coat. Season with salt and pepper, to taste (if needed). Wash lettuce and separate into leaves, patting each one dry with a paper towel. Spoon salad into center of each leaf and roll.

You can substitute 10 hard boiled eggs (peeled & chopped) for the chicken, or 3 cups small cooked shrimp. Makes a terrific salad with a bit of a sweet taste from all the fruit.
