Serves 6

6 large chicken breast halves, skinned and boned
        (or use a whole chicken, skin & bone after cooked)
1 1/2 quarts water
1 teaspoon poultry seasoning
1 teaspoon celery salt
1/2 teaspoon salt
2 tablespoons extra-virgin olive oil
1 cup chipped sweet onions
1 cup chopped green and/or red bell peppers
2 teaspoons chopped garlic
2 hands full fresh baby spinach
1/2 cup bite size artichoke heart pieces (optional and yummy!)
1 more teaspoon poultry seasoning
1/2 cup half n half
1 cup sour cream
1/2 cup shredded Swiss cheese (or your favorite)

Drop chicken (fresh or frozen) into boiling water (seasoned with poultry seasoning, celery salt and salt). Simmer (low bubbling boil) for 45 minutes. Turn  heat off and cover. Let chicken stand in water for at least an hour. In a large heavy skillet, heat olive oil over medium heat. Add onions, peppers and garlic. Saute for about 5 minutes and add the spinach (and artichoke pieces-if using). Stir until the spinach melts-about 2 minutes. Remove chicken from the water and place in a 9" X 13" baking dish. Slice chicken into  1/2 inch thick pieces. Add spinach mixture to the chicken. Sprinkle with the next teaspoon of poultry seasoning. Gently mix. Pour half n half over top and stir in sour cream. When all ingredients are combines, sprinkle with cheese. Bake in a 350 degree oven uncovered for about 15 minutes or until the cheese melts and starts to bubble.

The combination of herbs in the poultry seasoning makes this extra flavorful. It is a full meal all in one dish. The chicken is amazingly tender. Leaving it in the water after it has boiled gives the chicken time to become even more tender and full of the sflavors.
