Makes 12 squares.
Duncan Hines Yellow Butter Cake mix
1 1/2 sticks butter, melted
1 egg
1/2 teaspoon salt
2 teaspoons vanilla extract
Mix all together. Pat into the bottom of a 9" X 13" baking pan that is lined with parchment paper.
8 ounces Philadelphia cream cheese, softened
4 eggs
1 teaspoon vanilla extract
1/8 teaspoon salt
16 ounces confectioners sugar
Cream the softened cheese, add eggs and beat well. Add vanilla and salt. Gradually add sugar. Pour over the bottom layer. Bake in middle of the oven for an hour and 5 minutes at 300 degrees. Let it cool completely and cut into squares. ENJOY!
My mom is 94 and lives in an assisted living community. She and the ladies she dines with three times a day kept talking about this recipe and wanting to try it. They don't have a kitchen so they aren't able to cook. At the same time, another friend also suggested this recipe, so I decided to try it and share with the ladies. Oh my! They totally enjoyed it. It's a keeper. Very rich and buttery.
