Serves 6-8
1 cup thinly sliced fresh mushrooms
1 cup each chopped sweet onions
1 cup fresh broccoli pieces
5 large eggs
2/3 cup whole milk
1/4 cup chopped roasted red peppers
1 cup shredded Cheddar cheese
1 unbaked 9-inch pie crust
Preheat oven to 375°. In a heavy skillet, over medium heat, spray a little vegetable cooking spray and then add the mushrooms, onions and broccoli, stirring and cooking for about 5 minutes or until crisp-tender. Remove from heat. Whisk the eggs and milk together in medium bowl until blended. Stir in sautéed vegetables, red peppers and 1/2 cup cheese. Pour mixture into the unbaked pie crust. Place on a baking sheet. Bake 35 minutes. Top with remaining cheese. Bake another 5 to 10 minutes or until knife inserted in center comes out clean. Let stand 10 minutes. Cut and serve.
