Baked Peach Dumplings with Rum Sauce

Serves 6

6 whole ripe fresh peaches, rinsed and dried
3 cups pastry dough or 1 Pillsbury All Ready or Bests Choice All Ready refrigerated pie crusts
1/2 cup sugar
2 tablespoon butter, melted

Brush both sides of the dough with melted butter and sprinkle with sugar. Cut dough into six equal pieces and wrap each piece around a peach with the seam side up. Place on a foil-lined baking sheet and bake at 400 degrees for 10 minutes. Top with the rum sauce below:

2 cups confectioner's sugar, sifted
1 stick butter
1 egg, beaten
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
2 tablespoons rum or rum extract

Melt butter in sauce pan. Stir in sugar until dissolved. Add vanilla and nutmeg. Add a little of warm mixture to beaten egg, whisking. COmbine mixtures and add rum.
