Bacon Wrapped-Gorgonzola Stuffed Chicken

Serves 2

1/4 cup crumbled Gorgonzola cheese
2 tablespoons minced sweet onion
2 tablespoons minced fresh parsley
1 tablespoon minced fresh garlic
2 skinless, boneless chicken breast halves
Salt
Ground black pepper
4 thick slices Applewood smoked bacon

Mix together the cheese, onion, parsley and garlic. Slice a pocket in each chicken breast. Lightly salt and pepper inside of the chicken. Use a spoon and stuff half the cheese mixture inside each chicken breast. Pull the outer edges of the stuffed chicken together and then tightly wrap two pieces of bacon around each breast. Secure each end with a tooth pick. Place both stuffed pieces in a 9" X 9" backing dish. Bake (uncovered) at 375 degrees for 35 minutes. Allow the stuffed breasts to set for about 5-10 minutes. Remove toothpicks. Slice crosswise. Serve warm. YUM!  

This is a recipe we make for special occasions. It's always a deliciously rich and flavorful treat. If Gorgonzola is not your favorite, softened cream cheese is a great substitute.
