Serves 6
6-8 carrots, cut lengthwise and cooked
1/4 cup liquid from cooking carrots
2 tablespoons grated onion
2 tablespoons horseradish
1/2 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground paprika
1/4 cup bread or cracker crumbs
1 tablespoon butter, melted
1 tablespoon minced fresh parsley
Spread cooked and drained carrots in shallow baking dish. Mix carrot liquid (or water), onion, horseradish, mayonnaise, salt and pepper. Pour over carrots. Combine crumbs, butter and paprika. Sprinkle over carrots. Bake at 375 degrees for 15-20 minutes. Garnish with minced parsley.
The flavors in this give a whole new meaning to baked carrots. My neighbor Alma made this for our family years ago and now it's one of our favorites.
