Serves 6-8

2 cups plain pumpkin puree
3 large eggs
¾ cup sugar
¼ cup maple syrup
¼ cup Half n Half
3 tablespoons salted butter, softened
1 teaspoon pure vanilla extract
1 ¾ teaspoons pumpkin pie spices
¼ teaspoon salt

Preheat oven to 325°. Lightly spray a 2-quart shallow casserole dish with vegetable shortening. In a large bowl, combine all ingredients, beating with an electric mixer until well mixed. Will take about three minutes. Pour into prepared casserole dish and bake for an hour or more, just until the center is firm. Cool for a few minutes and serve. You can also use muffin tins or individual custard dishes to bake these little soufflés. Baking time will be much less - just keep an eye on them and check after 30 minutes. When center is solid, they are ready. Lightly dust tops with a bit of confectioners sugar and a tiny tad of pumpkin pie spice. YUM!
