Serves 8

3 tablespoons olive oil
3 pounds boneless beef chuck, cut in 1-inch pieces
1 (14 to 16 ounce) can diced tomatoes
1 cup reduced-sodium beef broth
2 cloves garlic, minced
1/2 cup medium hot chunky salsa
1/2 tablespoon chili powder
1 teaspoon dried oregano leaves
Sour cream
Green onions, thinly sliced
1 avocado, cut in chunks

Heat oil in large pot over medium heat. Brown beef. Dab off extra grease. Stir in tomatoes (with juice), broth, garlic, salsa, chili powder and oregano. Bring to a boil. Stir bottom of pot well. Reduce the heat to low. Cover tightly and simmer for 1 1/2 to 2 hours. It's ready when the beef is tender. Top each serving with a dollop of sour cream, a few pieces of green onion and a couple of chunks of avocado.

You won't even miss the beans and the reduced number of carbs is quite impressive and extra meaty combination of ingredients. ENJOY!
